100% Great Lakes Fish “Head to Tail Showcase hosted by UW-Milwaukee School of Freshwater Sciences

On October 1 the University of Wisconsin-Milwaukee's School of Freshwater Sciences hosted a 100% Great Lakes Fish “Head to Tail Showcase.” The event featured non-filet dishes made from Great Lakes fish and was an opportunity to showcase the innovative ways that all parts of the fish can be commercially used in food and non-food products. The program featured GSGP Executive Director David Naftzger, Sam Rikkers of the Wisconsin Economic Development Corporation, Christy Remucal of the University of Wisconsin Sea Grant/Water Resources Institutes, Andrew Daire of the University of Wisconsin-Milwaukee, Todd Kalish of the Wisconsin Department of Natural Resources, Charlie Henriksen of Henriksen Fisheries, and Mike Friis of the Wisconsin Coastal Management Program, Wisconsin Department of Administration). Special thanks to Cameron Whyte and Andrew Miller of Third Coast Provisions for imagining and making the delicious food, and Henriksen Fisheries and Dan’s Fish, Inc. for providing the fish.
